Dandelion honey is a great remedy for these troubles. See below our delicious homemade dandelion honey. All dandelions we used are wild and picked from our garden and the meadows. I really enjoyed picking these dandelions.
You'll need 30 minutes of an investment just for gathering. Don't have dandelion growing in your area? You can find online a reputable source of dried organic or wild-harvested dandelions in exchange for a fresh harvest.
Dandelions should be picked far away from the busy roads. Roundup teaches us that dandelion is a weed with no use but, in fact, dandelion has a long history of uses including its leaves which is said to help regulate digestion, nourish liver and bile, help with rheumatism, in aid to dissolve kidney stones, and a beauty tonic for the skin and face.
Pick fresh dandelions in the months of April and May. Wash off flowers with running water. Place flowers in large pan, add water and lemon. Cover large pan with a top.
Cook up flowers with a medium to high temperature for approximately 15 minutes. After the 15 minutes, turn off the heat and let this mixture sit for 24 hours or over night.
The next day, strain liquid removing the flowers. After straining add sugar. Boil mixture while stirring often for a duration of one hour or longer until mixture loses its water content.
Test liquid by taking a teaspoonful from the pot dropping it into a room temperature teacup. Liquid should reflect the consistency of honey. Honey should have color appearances like yellow, gold, or a golden hue. Fill honey in a marmalade jar or glass with sterile closure.
